What is EPR? Mine says EPR full time, level 2 didn't know what that means.

Expiratory Pressure Relief. It lowers your exhale pressure by the set amount (1, 2, or 3 cmH2O) to help make it comfortable when breathing out against the pressurized air. You can also turn it off if it doesn't bother you.

Feel free to change your EPR settings, but be wary when reducing them. You might find that going from an EPR of 2 to an EPR of 0 is quite a significant change and causes discomfort. If you want to reduce your EPR settings, I'd recommend going one setting at a time with at least 3 days on each intermediate step.

Paptillian, I think the concern for people using tap water verses distilled water is that chemical in the water (and different countries use different chemical) may be breathed in through the humidifier process and into their lungs and everyone will have a different opinion on that as well.

That is incorrect. The main problem with tap water is the mineral content. A "hard" water will leave mineral deposits. Too many deposits can cause uneven heating as well as a place for crap to grow. If the water is drinkable, there's nothing in it to hurt you when you breathe in the moist air. We probably inhale just as much when we take a shower in the same water.

It can help you get used to the sensations of the air. Consider also downloading and trying out the two software available here. You can view your data yourself.
