PR DreamStation question

Thinking-about Not exactly! You may have "the right" to choose who you want to deal with, but that does not mean your insurance will cover your equipment.

You can choose a non participating provider, but you will pay a greater share of the cost of CPAP and supplies.

My insurance lists 3 possible DME providers who they contract with in my area.

Not all insurance/Medicare policies are equal.

I am now wondering if there is some way using their Encore software that they were able to lock things down outside of the official Provider Manual? Any ideas?

Turn off EZStart. Some settings are mutually exclusive--if set then others cannot be changed. If you set EZStart to OFF you should be able to change from CPAP to Auto.
