Lastnight, my CPAP humidifier ran out of water and I woke up to inhaling an awful smell, like burning tin. Now, I feel nauseous...

I have a new ResMed. Can those fumes harm you?

The smell is likely from overheated plastic in the tank.
You don't want to be inhaling that on a daily basis -- but, don't worry about a single exposure. There are plenty of more harmful pollutants in the air.

Make sure you're getting your tank filled to the line every day. Dial down your humidifier a bit to avoid running dry.

How much water a sleep session will use depends on the air temp and the relative humidity. So, you may see seasonal differences in the amount of water it uses.
