so hard to get a good coffee

There are only 3 strengths of black coffee:

1. The spoon stands up

2. The spoon dissolves

3. The cup dissolves

I like mine somewhere between 2 and 3.

you haven't been to the PNW, my friend Big Grin We make yummy coffee here! I grind my very own Stumptown French Roast beans every morning, and while I do use a drip coffee maker, I use far more coffee than anything you would find commercially available anywhere but Downtown Portland (or maybe Seattle) It's not quite turkish coffee or espresso, If I want that I make that with different equipment - It is similar in taste to what I have had at a good French restaurant in London - perhaps a little less smooth since I don't typically use the press (but I have one)

(I know, I know - Starbucks is out there making us look bad....)

Tongue Suck Technique for prevention of mouth breathing:
  • Place your tongue behind your front teeth on the roof of your mouth
  • let your tongue fill the space between the upper molars
  • gently suck to form a light vacuum
Practising during the day can help you to keep it at night

Back in my younger days when I was in the USAF I was navigator on AWACS (Boeing 707 with a frisbee trying to mate with it). We were on a rotation to Saudi during the Iran/Iraq war and our average flight was around 16 hours. Our crew was making the duration from day sorties to night and we decided to try some of the Saudi espresso after dinner that night. Big mistake. First of all, it made tar look like water. Second, it had enough caffeine in it to jumpstart Custer's 7th Cav. We were all big coffee drinkers, but it still took us two days to come down from the espresso. We could see noises. I would hate to see what our EKGs looked like on that stuff.

Needless to say, the word got out about don't drink the espresso before flight.

In several trips to North America I've never had a really good coffee. It's always either too weak or too strong and very bitter. There is a sweet spot where the coffee is strong but not bitter, with a nice crema and a velvety mouth feel. Blend it with a well frothed milk for a latte, cappuccino (my favourite) or flat white.

After several years of drinking progressively worse coffee from our DeLonghi automatic at home we've ditched it and bought a Breville Oracle. Very nice coffee right out of the box, but Breville offer a "white glove" service where a barista comes to your house to show you how to get the best from the machine. Our white glove is tomorrow - I'll report back later.

Thanks for the very kind offer RG, but I don't think I should impose on you like that.

The white glove lady came round this morning and took us through the machine, mainly cleaning and maintenance procedures. All the out-of-the-box settings were pretty much spot on except the grind was set a bit too fine. She also left us with a kilo of very nice freshly roasted beans which have a subtle but complex flavour - much nicer than the Lavazza we've been using.

I purchase green coffee beans and roast my own. I prepare my coffee in a French Press.
