The N30i cushion is gentle on your nose. It is better to start with than trying pillows. Ensure you have access to most of the nosepieces (there are 4). You will need to select the best one for your nose size and shape.
I am not qualified to advise you on post-surgery matters, but tuning down the treatment pressure does not seem to be the right path from a treatment perspective. If your nose cannot tolerate the pressure, you should return to the FF mask.

The N30i arrived earlier today (its written on the packaging) but it did not have four different attachments. Nevertheless, it fit well and I tested it, I set the machine to Pillows and found that if I open my mouth, air leaks through it, if that makes sense...but if my mouth is closed it seemed OK.

I have always been a mouth breather so does this mean I will have to use special tape on mouth to ensure it stays closed to force myself to breathe through my nose? At least for a while I assume whilst I get used to it?

You should keep your mouth closed while using it, which can be difficult for a mouthbreather. It would be best to exercise during the daytime with mouth-taping (without the mask) to be accustomed to nasal breathing. The best option is to use mouth taping overnight, too. A soft collar can also help if it is tall enough—also a chin strap (Supplier 37 is strongly suggested)

Its been a while , I need help please...

I recently started using N30i nasal pillows and use a Knightsbridge chinstrap to keep my mouth closed...

I am finding that I am experiencing more daytime sleepiness since switching to pillows...

Here are the last 5 days worth of readings , please can you let me know if 

a) I need to tweak anything
b) How my readings can be improved

I am getting used to the nasal breathing after being a mouth breather for all my life

I suggest you increase your minimum pressure to 12.2 cm and maximum to 14.2 cm. Unfortunately, this will not diminish your CAs but can reduce the number of pressure adjustments.

What does CA stand for?

What symptoms do I feel if they don't diminish?

What's the benefit of reducing the number of pressure adjustments, how will it help me?

CA stands for Clear Airway events. On your OSCAR, you can see that CAs are the main contributors to your AHI figure. When you have a CA event, your airway is not blocked; nevertheless, you do not inhale. It is when the carbon dioxide saturation in your blood becomes too low or your brain does not trigger inhalation for some reason.
CA events disturb your sleep, and you might want to reduce their number if you can. CAs cannot be resolved with pressure adjustment. However, the more advanced (and expensive) instruments I mentioned above  can mitigate them. 

The pressure adjustments are the jumps visible on your pressure charts as sharp upward steps. Your instrument increases the pressure stepwise  because it senses some flow limitations in your inhalation periods. These can disturb sleep, and it is better to reduce their number. However, there are more and less sensitive people, so their reduction is not always necessary.
